Turkey Tips

“For a tasty turkey, combine equal parts minced garlic and olive oil and spread the mixture between the skin and the meat. Roast the bird breast-down so the juices from the dark meat flow into the dryer white meat.” Janet, GDM Editor

Stuffing

Simple Giblet Stuffing-Janet, GDM Editor

  • 1 loaf bread, cubed and toasted (use whole wheat for the most nutrition)
    For extra-tasty stuffing, make a loaf of whole wheat from scratch using chicken broth instead of water, and add 1 tablespoon dried poultry seasoning and 1 tablespoon onion powder
  • 2 cups chopped celery
  • 2 cups chopped onion
  • 1 red apple, chopped
  • Turkey giblets and neck
  • Chicken broth, as needed
  • Poultry seasoning
  • 1 stick butter, optional

Place the giblets in a saucepan and cover with water. Bring to a boil, then simmer until the giblets are cooked through. Drain, reserving giblet broth. Pull the neck meat from the bones and chop, along with the other giblets. Saute onion, celery and apple until the onion and celery are translucent. Combine sauteed vegetables, giblet meat, bread cubes and poultry seasoning. Moisten with reserved giblet broth and, if necessary, additional chicken broth, until the bread is moist but not soggy. Cook in the bird cavity or a separate casserole dish, as desired, making sure that stuffing in the cavity reaches an internal temperature of 165F. If cooking in a casserole, melt butter and drizzle over the top of the stuffing before baking.

Side Dishes
