Two Spinach recipes

These two recipes call for frozen spinach, but you can just as easily use fresh, cooked spinach in either one.
Special Mushroom Spinach
If you are a mushroom lover, you will surely like this combination of spinach and mushroom with cheese, pepper and broth. This recipe can easily be made in large portions for parties and potlucks.
You need:
1 pound mushroom
2 packages frozen spinach, cooked and drained well
1 cup beef or chicken broth
2 tsp salt
2 Tbsp. butter
1/2 cup scallion or green onions, Green and white parts, chopped
1 tsp black pepper
1 cup grated sharp cheddar cheese
Preheat oven to 375F. Lightly oil an 8-by-11-inch baking dish.
Wipe mushrooms with a paper towel. Cut off the hard and unusable stem ends and other parts. Separate stems and caps. Chop the usable parts of mushroom stems coarsely and set aside.
Heat broth in a saucepan, add 1 tsp salt and mushroom caps. Cook until they are slightly limp.
Heat a skillet on medium low heat. Add butter, scallion and mushroom stems. Saute until onions are transparent.
Line the bottom of the baking tray with spinach . Spread the mushroom stems and onion over this spinach layer, then top with mushroom caps, cavity side down.
Sprinkle with remaining salt, pepper and cheese. Bake until bubbly, about 20 minutes.
Serve immediately.
Baked Eggs with Spinach
Here is another delicious recipe which will take only a few minutes to prepare.
You need:
1 cup frozen spinach, thawed and well drained
2 eggs
1/4 cup ricotta cheese
1 cup grated Parmesan cheese
1 Tbsp. butter
1/8 tsp white pepper
1/8 tsp nutmeg
Salt to taste
Preheat oven to 350F. Lightly butter two 4-inch oven-proof bowls.
Heat butter in a skillet over medium heat. Add spinach and stir quickly until spinach is heated for 2 minutes.
Put spinach in a small mixing bowl. Add ricotta cheese, Parmesan cheese, salt, pepper and nutmeg. Stir and divide mixture among two bowls.
With the back of a spoon, make a nest in the center of the spinach in each bowl. Slide one egg onto each nest without breaking the yolk.
If you wish you can sprinkle half teaspoon of Parmesan cheese over each egg.
Bake until eggs are set, about 10-15 minutes
Serve immediately.
