Recipe: Applesauce Rainbows

You can make this with fresh or thawed frozen fruits.

3 cups plain, unsweetened applesauce
1 cup sliced strawberries
1 cup sliced peaches with peels on
2 kiwi, peeled
1 cup blueberries
Whipped cream or vanilla yogurt (optional)

In a blender, puree, separately, the strawberries, peaches, kiwi and blueberries, rinsing the blender between fruits. Set aside 1 cup plain applesauce. Combine each pureed fruit with 1/2 cup of the remaining applesauce in a separate small bowl. You should have approximately one cup each strawberry (red), peach (orange), plain (yellow), kiwi (green) and blueberry (blue-purple) flavored applesauce.

In tall clear cups, carefully layer each color, starting with blueberry at the bottom, topped with kiwi, plain, peach and strawberry. Garnish with a dollop of whipped cream or yogurt for a “cloud.”

For a child-sized portion, use 1/2 cup containers and a little less than 1 tablespoon of each color sauce. The recipe will make about 10 small rainbows. For an adult-sized dessert, use parfait or wine glasses that hold at least 1 cup, and layer about 2 tablespoons of each color. The recipe will make 4-5 of the larger size.
