A delicious and tangy sprout salad rolled up in a crisp nori roll. All the sprouts needed can be found at www.SproutLiving.com. This light yet nutrient-dense treat will fill you up for hours.

My Favorite Dressing
2 tbs. Flora sesame seed oil
1 tbs. lemon juice
2 tsp. lime juice
1 tbs. agave nectar
1/4 tsp. Celtic Sea Salt
1/2 tsp. goji berry extract powder

Gluten Free Oatmeal Breakfast Bars

appleoatmealbarsDon’t let the rush to get ready for work and school get in the way of a nutritious breakfast.  These bars, similar to Quaker’s Oatmeal To Go, provide the nutrition of a bowl of oatmeal in a convenient, portable, packable bar form that is great for hurried mornings.  They store well, so you can make a week’s worth ahead of time and store in the fridge or freezer.

The only grain included is oats, making them suitable for gluten-free diets as long as you have uncontaminated oats.  Unlike many conventional homemade granola and granola bar recipes, these oatmeal breakfast bars contain no oil or added sugars, so they are low in fat and refined carbohydrates.  For a morning dose of protein, try spreading peanut butter or another nut butter on the bars.  (continue reading…)

greendivaThe dietitians at LMI came up with a low allergen diet form of green bean casserole.  As a bonus, you are getting two recipes in one.  Use the first part of the recipe to make wheat-free onion rings as a delicious occasional side dish.  They are really good on their own and simple to make.

Great Sesame Bars!

These sesame bars make a great dessert or nutritious pick-me-up any time of day and they take only minutes to prepare. Enjoy!

Prep and Cook Time: 10 minutes

Ingredients:
•           1 cup walnuts
•           ½ cup sesame seeds
•           1½ cups pitted dates
•           1½ cups raisins
•           1/8 tsp salt

Directions:
1.         Pulse all ingredients in food processor until mixture holds together when pressed.
2.         Press mixture into 9inch square pan, and chill. Cut into squares to serve.
